This "start small, stripped down to the core" strategy has a name in the product marketing world: Minimum Viable Product (MVP).

Figure out the core of your service, then invest the minimum time and money into making that core a reality so you can test it in the market as soon as humanly possible. That way, you don't spend way too much on all the extra stuff before you know if your main idea gets real-world traction.
